Dos Santos Renovating Location, Adding Castle Rock Restaurant

A Colorado-based Mexican restaurant is undergoing some changes plus a third location is planned.

Dos Santos in Denver could soon undergo some exterior renovations. According to permitting application information with the City of Denver, the Mexican restaurant is planning a new exterior patio extension plus new radiant heaters at its Denver location at 1475 East 17th Avenue.

Dos Santos is also planning to open its third Colorado location at 20 Wilcox St., Castle Rock, CO 80104. According to a Dos Santos Facebook post, the location is “brand new construction in the heart of Castle Rock.” The other Dos Santos is located at 70 East Moreno Colorado Springs.

Dinner guests can try a salsa flight or nachos, as well as a variety of tacos and quesadillas. The Dos Santos Bowl starts with rice, beans, corn, guacamole, and more, and diners can add one of several options of protein including chicken tinga, porky lechon, and shredded beef.

Brunch is served on the weekends, and the cocktail menu features a variety of flavorful margaritas.

Brothers Kris and Jason Wallenta opened the first Colorado Dos Santos in 2015 after owning and operating a restaurant in Mexico. There is no official word, yet, on when the new Castle Rock location is set to open or when renovations could be completed at the Denver location.
