After a warm welcome in Cherry Creek, Mendocino Farms has buckled down on its plans for new locations in Colorado. The sandwich company has a list of new sites it’s working on that also includes a Downtown Denver store, Westword writes.

In addition to a site in the center of the city, the company is also working on opening in Highlands, Boulder, and Centennial, as reported by What Now Denver.  Those stores are all slated to welcome guests in 2026. The Cherry Creek store opened in May.

Mendocino Farms told the publication, “While timelines are still being finalized, we’re actively securing sites and moving through the early stages of lease negotiations, permitting, and design. We can share that in Downtown Denver, we are focusing on the Central Business District.”

The eatery is known for upscale sandwiches, creative salads, and chef-crafted seasonal specials. It was started in Los Angeles in 2005 and now has more than 70 locations nationwide, and has since grown to Texas and Washington as well, the company’s website explains.
