Downtown Eaton Getting a Doug’s Diner

The business will open in the spring.

Doug’s Diner is moving ahead with its next Northern Colorado location, with a new location under development in downtown Eaton, at 122 Oak Ave. The restaurant chain announced recently that its latest outpost will welcome guests sometime next spring.

Sara and Steve Schwartz, who operate Doug’s Diner in Windsor, confirmed they will run this upcoming Eaton location. The 3,300-square-foot dining establishment will feature seating for 130 to 150 guests, with an industrial-style interior, a bar, and a patio area.

Breakfast and lunch service will be available daily. The Schwartzes anticipate the opening will happen in April and that the new business will generate 20 to 25 jobs for the local community, they tell What Now Denver.

“Steve and Sara decided several years ago to embark on a new journey as restaurateurs. They currently own Doug’s Diner in Windsor and have greatly enjoyed getting to know the patrons at their location.  They feel Eaton is ready for a fresh food option in their community,” the company said.

The property that the diner is moving into is in the midst of a large-scale redevelopment effort. Property owner Dawn Hass has been transforming the brick structure, built in 1885, to house the eatery, offices, and a retail space, according to the Greeley Tribune.

Doug’s Diner launched more than a decade ago and has grown to nine Front Range restaurants. The brand is led by longtime industry operators Rick Bruening and Linda Hernandez, who bring more than 80 years of combined experience and have a team of trusted licensees.
