Einstein Bros. Bagels Taking Over Former Bruegger’s

Brands are swapping, but bagels will stay.

After more than a decade as a neighborhood staple, Bruegger’s Bagels at 2000 S. University Blvd. Unit B has officially closed — and Einstein Bros. Bagels is preparing to take its place. City permitting records have revealed the planned swap, and the company has confirmed it to What Now Denver.

A company spokesperson for Einstein Bros. confirmed that the new store will be corporate-owned and operate daily from 6 a.m. to 2 p.m. Construction is expected to begin soon, with an anticipated opening in early 2026.

Described as a “tenant improvement”, involving architectural, mechanical, electrical, and plumbing work, the project is listed as “review in progress”. The architect on record is Jesse Goldman with CSHQA.

“We design everything with our guests in mind,” said Adam Modzel, Chief Operations Officer at Einstein Bros. Bagels. “Denver has a strong breakfast culture, and we can’t wait to share our fresh-baked all-day bagels while also surprising guests with new flavors and chef-created sandwiches. This is breakfast the way it should be – fresh, flavorful, and fun.”

This comes just weeks after Bruegger’s Bagels abruptly closed. LetsGoDU reports it was the last location of the chain left in Colorado. The location had been embroiled in a legal dispute between the brand and the store’s franchisee last year, and by late summer, community members saw the space being cleared out.
