Colorado Springs’ newest fine-dining destination is preparing to open this fall. Roth’s Sea & Steak, the signature onsite at the Ford Amphitheater property, is targeting a November debut, Springs Magazine reports. Its address is 13010 Spectrum Sun Vw.
Perched at the back of the 9,000-plus-capacity amphitheater, Roth’s Sea & Steak will offer mountain views and a prime sightline of the concert stage — though it will be open year-round, independent of the performance calendar. Artist renderings by BCA Studios Architects show a sweeping guitar-shaped bar and a curving staircase leading to a wine cellar.
Roth’s Sea & Steak will be open for dinner service Sunday–Thursday, with extended hours until midnight on Fridays and Saturdays. Reservations open 30 days in advance. There will be eight private dining rooms seating 12 to 228 guests, as well as an exclusive seven-course Chef’s Counter tasting options for eight guests, its website advertises.
Its menu promises luxury-driven dishes like Tomahawk Steak, A5 Wagyu Tartare, Mediterranean Sea Bass with Romesco, Whole Roasted Turbot carved tableside, and Veal Wellington. The beverage program features rare whiskeys, an artisanal cocktail menu, and a curated wine and craft beer list.
The restaurant was imagined by and named after J.W. Roth, founder, chairman, and CEO of Venu Holding Corporation (the entity behind the Ford Amphitheater). Executive Chef Ricky Biswas has been chosen to lead the kitchen. Biswas has trained with Michelin-starred chefs and worked at top U.S. restaurants like The French Laundry and Coi. He most recently led culinary programs at Brush Creek Ranch and Devil’s Thumb Ranch.
