The Gaylord Rockies Resort & Convention Center in Aurora is embarking on an extensive remodel that includes re-concepting two of its existing restaurants. The current Monte Jade restaurant at the 6700 N. Gaylord Rockies Blvd. facility will be transformed into Garden & Grain, 9 News reports.

Garden & Grain will have healthy fare with a focus on gluten-free, vegetarian, keto, low-carb, and vegan options. It is scheduled to open in late 2024, as Asian eatery Monte Jade recently closed.

This transformation is part of a larger initiative by Ryman Hospitality Properties, Inc., to enhance the resort’s dining and event spaces. The company is currently in Phase Two of a multi-year investment plan.

Since its opening in December 2018, the Gaylord Rockies Resort & Convention Center has been a prominent destination for both leisure and business travelers. The 1,500-room hotel is conveniently located by the airport and has a massive complex of amenities, including a water park, pool, Topgolf, and a spa.
