Gladys Evolving Inside Edgewater Public Market

The concept is moving to a larger space.

After three and a half years as a food stall at Edgewater Public Market, Gladys is moving into a larger home inside the commercial center. According to Edgewater Echo, the business will switch to a space about quadruple the size — 5505 W 20th Ave Suite 186.

Co-owners Rocky Hunter and David Grant are transitioning the concept from its original 276-square-foot stall into a 2,542-square-foot shell formerly occupied by Meta Burger, which closed in December 2024. The new location will allow Gladys to introduce full table service, a beverage program, and a chef’s counter showcasing the kitchen.

“We always kind of wanted to grow it into something more, and have a dining room and all these service elements that we couldn’t do from the stall. We’re happy to see what we’re calling phase 1.5 for Gladys, as far as the evolution,” Hunter told What Now Denver.

Gladys plans to close its current stall the first week of July and aims to open the new location shortly after that. Renovations are underway but are largely aesthetic, like painting, flooring, and new fixtures and furniture.

The eatery launched in November 2021 as a small, all-vegan operation. Hunter and Grant met while playing in a punk band twenty years ago and have both been vegan for nearly two decades. Hunter was formerly chef de cuisine at Fruition, while Grant previously led the kitchens at City o’ City and Watercourse Foods, its website shares.
