The owners of a San Luis Valley brewing company are doubling down on their new multi-concept venue in Poncha Springs. After opening a coffee shop and bar this summer, they are adding a market and tavern at the site — 10495 CR 120 — Colorado Beer Geek writes.
In June, Derek and Lacey Heersink, owners of Spare Keg Brewerks, opened a coffee shop called Herks Perks and a taproom called Herks Werks. But they aren’t stopping there; the couple is also planning to debut Single Iron Meatwerks and Social Stillwerks on the property.
While details are scarce, its website explains that Single Iron Meatwerks will have locally raised meats and vegetables. It says a menu is coming soon, and will include items such as goat, gyros, shareable meat boards, and housemade tortillas. Social Stillwerks will have locally distilled spirits and cocktails.
The Heersinks have been in the local beer business since 2017, when they first opened Square Keg (originally called Square Peg). It expanded to Creede in 2020, and then again to Poncha Springs this year. Sadly, their team is mourning the tragic loss of co-founder Mark Martinez, who passed away a few months ago.
