Local Food Truck Adding Brick-and-Mortar Spinoff 

Los Pepe’s owners will open a restaurant: Taqueria del Barrio.

Local favorite food truck Los Pepe’s will be expanding its reach, launching a sister concept called Taqueria del Barrio. The eatery will open at 1802 N College Ave. in Fort Collins, reports from The Coloradoan state

The food truck, which specializes in authentic Mexican cuisine, has been operated by the Santiagos family for over a decade. Jesus Santiago, who arrived in Colorado from Mexico nearly two decades ago, is fulfilling a dream with this brick-and-mortar milestone. 

Central to Taqueria del Barrio’s offerings is their signature dish: birria served with a side of consomé for dipping. The eatery will also feature a variety of classic Mexican street food favorites, from mouthwatering tacos filled to flavorful tamales and hearty burritos.

The building that the concept is moving in to is owned by Brian Seifried, owner of The Wing Shack. Pobre Panchos formerly occupied the space. It’s a standalone property in the northernmost part of town, by Terry Lake.
