Local Restauranteur Creating New Concept in Cherry Creek

Ash & Agave is taking the old California Pizza Kitchen space.

Denver restaurateur Sean Huggard, founder and president of Shucking Good Hospitality, is preparing to debut his newest concept, Ash & Agave. According to KDVR, the eatery will be located inside the Cherry Creek Shopping Center at 3000 E. 1st Avenue, Ste 135.

“Ash + Agave is inspired by the vibrant and effortless lifestyle of the Mexican Riviera. Our new Cherry Creek destination will celebrate the ocean’s bounty with a signature raw bar while showcasing the nuanced, smoky flavors imparted by wood-fired cooking,” Sean Huggard told the publication.

It will have a “tropical/coastal influence with lots of plant life and greenery”, a representative told What Now Denver. The business is slated to open in late 2025 or early 2026. With a charcoal and wood-fired grill, its menu highlights will include charred meats, fish, and oysters, alongside mezcal-forward cocktails and a raw bar.

Huggard’s background in hospitality spans over 20 years, Canvas Rebel writes. A graduate of the Culinary Institute of America, he spent over a decade working in Denver restaurants before opening his own concept, Blue Island Oyster Bar, in 2015. He also founded Oliver’s Italian in 2023.

The restaurant will open in the former California Pizza Kitchen space, which closed earlier this summer. A 4,800-square-foot space, it will seat 250 guests inside and outside. It’s an exterior shell with great accessibility for both those shopping at the high-end mall and those just coming to grab a bite to eat. Valet service is right outside.
