An Nguyen and Thoa Nguyen are embarking on a new culinary journey together, preparing to launch a new eatery called Dân Dã. The restaurant, which will be located at 9945 E Colfax Ave. in Aurora, is described as a vibrant Vietnamese eatery.

The women are the daughters of the former owners of the now-closed New Saigon restaurant. That establishment was a Denver dining icon for nearly three decades, and An and Thoa will carry on the tradition of excellence.

Dân Dã, which means “rustic countryside” in Vietnamese, is slated to open its doors in the next coming weeks. It will be located by Banh & Butter Bakery, another concept owned by Thoa.

The restaurant will have a menu inspired by home-cooked meals. From pho and seafood platters to spring rolls and stir-fries, each dish is to be crafted with authentic ingredients. There will also be vegetarian and vegan options at Dân Dã.
