Mercantile Dining & Provision Experiences Ownership Change

Sage Hospitality Group is taking over the business.

According to Westword, Sage Hospitality Group now owns Mercantile Dining & Provision, expanding its portfolio of restaurants. The eatery’s owner has partnered with the company as the business enters a new era. 

The Union Station restaurant was founded by James Beard Award-winning chef Alex Seidel and has been a fixture in Denver’s dining scene since it opened its doors in 2014. It will receive a facelift as part of the ownership transition.

Sage Hospitality Group is becoming the majority owner of the renowned Denver concept. As part of the acquisition, Mercantile will be incorporated into its extensive portfolio, which includes the Dairy Block, McGregor Square, The Red Barber, and more. 

Seidel, renowned for his culinary excellence, also operates Fruition and Chook Chicken, and will continue to be involved with Mercantile as a collaborator. He will also take on a role with Sage supporting and developing new restaurant concepts.
