Mercantile to Bring Sister Store to the Denver Airport

The restaurant will join the lineup in Concourse A.

Mercantile Dining & Provision, a restaurant run by James Beard Award Winner Alex Seidel, is bringing its sister store to Concourse A at the Denver Airport at 8500 Peña Boulevard.

The restaurant, according to its website, is a culmination of Seidel’s previous ventures in Fruition Restaurant and Fruition Farms.

The culmination “represents the next evolution of Chef Seidel’s vision of approachability and transparency in dining,” further stating it looks to “bridge the information gap between farmer and customer.”

The menu takes stylings from both Seidel, who started his culinary career at the tender age of 14, and Executive Chef Alex Astranti with a focus on “elevated comfort food.”

Those joining for dinner can look for pasta, land and sea options ranging from a rigatoni with an arugula pesto to a Painted Hills beef strip steak with crispy confit fingerling potatoes.

If you’re there earlier for lunch, The Korean Fried Chicken (or K.F.C.) with jalapeno, pickled napa cabbage, cucumber, mint, cilantro and sweet and spicy chili sauce on a Fudmill Potato Sesame Bun should satisfy your afternoon cravings.

What Now Denver reached out to Seidel on Wednesday for more information about an opening date, but he was unavailable by phone. However, recent reporting from Denver Eater suggests it will join Concourse A sometime in 2022.
