Denver-based Moon Raccoon Baking Co., a farmers’ market favorite since 2020, is officially preparing to open its first retail storefront this summer. According to Westword, the duo behind the brand is working to get ready for business at 2839 West 44th Avenue, Suite 103, in the Sunnyside neighborhood.
Co-owners Zoe Deutsch and Kate Lange are expanding operations after starting out in a commissary kitchen during the pandemic. The last few years of growth have been fueled by community support, selling at neighborhood events, and wholesale.
The new space is mostly dedicated to production, with counter service and a small retail area. Deutsch told What Now Denver that construction is underway and drywall is going up this week. They hope to open in August and plan to hire two baristas and one production baker in about a month.
Moon Raccoon specializes in sourcing organic Colorado ingredients and grains, its website advertises. They will have breakfast pastries, cookies, croissants, danishes, espresso and drip coffee, and items from a small business (and friend of theirs), Sfoglina Pasta.
“Kate and I met at another local bakery that we worked at together, and just really had a passion for local ingredients, and there weren’t really a lot of bakeries doing that at the time that we wanted to work at, so we just decided to do it ourselves,” Deutsch said. “We’re excited to be a part of the Sunnyside community. I live in Chaffee Park, so it’s exciting to bring this to more of a residential area of the neighborhood.”
