Mother–Daughter Team Opening Mexican Grill

A long-empty corner near the University of Denver is finally buzzing again, as a new fast-casual Mexican concept prepares to open at 1135 E. Evans Ave #102. El Burrito y El Burrote will come from a mother–daughter team that’s very excited for their next entrepreneurial journey, according to Westword.

Yamilex Cruz and her mom, Maria Rojas, are the founders of the Latina women-owned business. Cruz has spent her entire working life in the food industry, and the two previously owned an eatery in Westminster and a food truck. Rojas, from Mexico, and is currently a chef at the Monarch Casino buffet.

BusinessDen reports the pair secured a lease for the 1,555-square-foot space earlier this year. It’s positioned between the recently opened Yemen Grill and the forthcoming Convict Coffee, which we covered last week. Construction is nearing completion, and the opening is scheduled for March.

Cruz told What Now Denver that the restaurant will begin with eight employees, including herself and her mother. Hours are expected to start at 6 a.m. to 6 p.m., with flexibility to expand once they better understand demand.

“We’re all about real Mexican flavor, with burritos and burrito bowls, quesabirrias with consomé, birria ramen, loaded fries, enchiladas, traditional street tacos, crispy chile rellenos, and those Denver favorites like smothered burritos, chili cheese fries, and smothered Mexican hamburgers,” Cruz said. “Everything’s made fresh, made fast, and from scratch!”
