Denver’s Wash Park neighborhood will be getting a new coffee and brunch destination, as Chef Mike Sanguinetti is preparing to open a cafe called Neon Cowboy. The concept, located at 300 S. Logan St., is taking over the former home of The Molecule Effect, the Denver Post writes.
Sanguinetti signed a 10-year lease for the 1,700-square-foot space, and it needs between $50,000 and $100,000 of work done to convert it. Real estate representation was handled by Brian Frank of Axio Commercial Real Estate, while Montana Rae of Henry Group represented the landlord.
He told What Now Denver that he expects to open at the beginning of November and will start hiring in mid-October. The business will employ four to six workers and initially operate from 7 AM to 5 PM, and be a “country vibes cafe, where Willie Nelson meets John Denver.”
Neon Cowboy will serve Novo coffee, pastries, breakfast sandwiches, salads, brunch plates, and French-style tartines, all made in-house. The brand has been teasing some dishes on Instagram in recent weeks. He expects to open by the holidays, and plans to do a few outdoor pop-ups prior to introducing the idea to the neighborhood.
With over 25 years of experience blending Southern and Cajun roots with fine dining, Chef Sanguinetti has served as an executive chef for major venues including Empower Field, Coors Field, Red Rocks, Fiddler’s Green, and Ford Amphitheater.
