New Concept Opening at Auraria Campus

A Peak Beverage venture will replace Tivoli Brewing Company.

A new chapter is brewing for Denver’s Auraria Campus, as the Tivoli Student Union’s iconic brewery taphouse prepares to welcome a new tenant. KDVR reports Peak Beverage is working on opening a concept at the college complex at the address 900 Auraria Pkwy #240.

Andy Klosterman, CEO of Peak Beverage, confirmed to What Now Denver that the upcoming bar will have something for everyone. There will be custom cocktails, alcohol-free options, and a rotating selection of food options. A brief pop-up stint is happening this month to test out dishes, and then he will finalize the menu before officially launching in August.

The building is featured on the National Register of Historic Places. Colorado’s first brewery, it opened in 1864 and was home to several others over the next century, Denverite writes. In the 90s, it became the main administrative building for the University of Colorado Denver, Metropolitan State University of Denver, and the Community College of Denver.

Peak Beverage started in 2012 as a small catering company and now does events all over the state with production companies like Arvada Center, DCPA, AEG, and Meow Wolf. Klosterman, an Arvada resident, has an extensive background in restaurant management and beverage concessions.

“Peak Beverage is extremely excited to work with Auraria campus directly to provide a school-centered restaurant and bar concept to the Tivoli Building.  Our company loves finding unique and special places like this to really explore and create something special by putting the customer in the center of the experience,” he told the publication.
