Ascent Brewery is set to take off soon, after the approval of a liquor license from the city, records show. Joe Prue and Stephanie McDermott are excited to bring a new beer spot to town, at a property they’ve transformed at 6630 Chief Rd, Peyton.
The establishment will have 12 taps — six flagship beers and six rotational options, brewed on-site. Social media posts show they have started brewing, and the first options will include a Dunkel, Helles, Hefeweizen, Pilsner, and English IPA. There will also be wines, ciders, and sodas. For food, Josh and John Ice Cream and Rocky Mountain Pizza are available, and there are food trucks onsite.
It will be housed in a 2,700-square-foot building constructed by Amish craftsmen and subcontractors for the interior. The spacious outdoor seating area spans 29,000 square feet, offering stunning views of Pikes Peak and the plains. It’s a 13-acre plot Joe and Stephanie have been working on since 2021.
“We’ve been building this brewery from scratch ourselves,” Joe told What Now Denver. “Stephanie and I are the only owners and workers, and we’ve poured our hearts into every part of this project.”
