Construction is wrapping up and hiring fairs are being held this week for a new food and beverage hall in Colorado Springs. The Well could open by the end of March if all goes according to plan, but the opening date could change depending on any potential delays.
According to The Well’s website, the “watering hole” will serve as a gathering place in the center of town. The Well has a variety of food offerings from four unique kitchens, a central bar, and a coffee shop in addition to outdoor dining and community spaces.
Several concepts will be featured at The Well. The anchor concept within the space is Gift Horse Bar & Café, which will offer coffee and tea selections, baked goods, and pour a full bar.
Dun Sun will offer a twist to Asian fusion cuisine with tacos, bowls, and sandwiches. Kumbala will offer authentic Mexican fare, while the Noble Burger menu will showcase new interpretations of standard sandwiches, sides, and burgers. Red Star Deli & Subs brings chef-inspired, deli-style sandwiches to the heart of Colorado Springs.
A group of philanthropic funders called 315 Collective, LLC, owns and manages the art deco-inspired building at 315 W. Pikes Peak Ave. in Colorado Springs. The building previously housed an auto repair shop and a bus depot and now includes updated designs by local firm Echo Architecture + Interiors and Westside Designworks.
One side of the building at Pikes Peak Ave. and S. Weber is now home to The Philanthropy Collective, while The Well is taking over the other side. The Well will fund the overall investment and is led by local restaurateur Russ Ware together with Colorado based Simpatico Hospitality.
