A new dining destination is coming to Estes Park, taking over an old shopping center. Gaslight Square Shops (200 Moraine Ave.) is being converted into a food hall, according to construction records that show the project is moving forward.
The remodel of the 9,500-square-foot property includes demolition, structural upgrades, full interior build-out, and installation of new mechanical, electrical, and plumbing systems. The food hall will feature multiple commercial kitchens, bar and dining areas, private dining, ADA-compliant restrooms, and dedicated storage and employee areas.
Dinesh Shakya, a local restaurateur who owns Café De Pho Thai, is at the helm of the new venture. He purchased the building in 2020, and the businesses that occupied it officially closed earlier this year, Estes Valley Voice reported.
The project is being managed by Skyler Design Build, with architecture consulting by BASIS Architecture. Bids for subcontractors and suppliers are currently being solicited, with RFIs due October 15 and bids due October 20. A timeline for construction and completion is not available, and the owner did not return requests for comment.
