Denver’s River North Arts District will see the unveiling of a new dual-concept, luxury hospitality experience, Rose & Thorn, this summer. The venue has announced plans for its opening, which will happen over two phases.
Rose & Thorn will be part of The Penrose apartment complex at 1740 36th Street. The integration of hospitality-driven spaces and urban residential development makes the project the first of its kind in Denver. The restaurant is a creation of the Denver-based Ósta Holdings.

Rose & Thorn Announces Two-Phase Opening
Rose & Thorn will debut in two stages this summer: Rose launches next month, and Thorn follows in late summer.
“Rose & Thorn is a layered hospitality concept offering a refined atmosphere, whether you are looking to relax in the sun or sink into something a little more intimate. Each space stands on its own, but together they create something truly unique,” said Ciaran O’Brien, managing partner of Ósta Holdings.
Rose Set to Launch This July
Rose, the 4,000-square-foot rooftop bar and restaurant that blends indoor and outdoor dining areas, is located at the top of the apartment complex. It has been designed for relaxed, all-day socializing.
Magnificent views of the 360-degree skyline and the Rocky Mountains will welcome guests at the restaurant. The reservation-only VIP pool lounge at the restaurant will offer poolside bottle service. Other features include an open-air grill and amenities like large-format cocktails and private seating.
Grand Opening Date Announced
As per the official announcement, Rose will have a grand opening event on Saturday, July 12, from 10 AM to midnight. The all-day rooftop event will feature drinks, DJs, and everything Rose & Thorn brings to the table.
Thorn Plans Late Summer Opening
Thorn, an intimate cocktail lounge, will be located underground at the complex and offer a more intimate atmosphere. In contrast to Rose, this space will feature live DJ sets, moody lighting, and an expertly curated cocktail menu. Offering top-shelf libations, Thorn will present a sophisticated late-night lounging experience.
A press release from Wednesday said that Thorn will debut later this summer. More details of the opening will be announced on the official website and the restaurant’s social media.
The Food Menu and the Beverage Program
The food and beverage program at Rose is designed for luxury lounging. Upon opening, Rose will offer a smaller grill menu featuring bold, summer-inspired dishes perfect for outdoor dining, including items like watermelon salad, crab guacamole, and gourmet sliders. A weekday happy hour will offer elevated small plates such as shishito peppers and shrimp skewers.
Once the kitchen is fully ready later this summer, the menu will expand to include seafood towers, sushi, coastal bowls, and weekend brunch.
Rose & Thorn’s beverage menu will be as creative as its food, led by Bar Lead Alan Garcia, a Level 2 Sommelier. Guests can enjoy seasonal cocktails made with top-shelf spirits, including unique twists like the Lavender Paloma and Fig & Smoke Old Fashioned. New drinks like The Penthouse, a tropical mix with vanilla vodka and passionfruit, will also be featured.
Rose & Thorn will also offer tableside, large-format, and bottle service options. A rosé-focused cocktail menu will add a playful touch that reflects the venue’s name. Garcia is also creating the drink menu for Thorn, which will feature stronger, late-night cocktails to match its lounge vibe.
Stay At “The Rose Petal”
A luxury Airbnb unit called “The Rose Petal” will also open on the penthouse level of The Penrose. It will offer spectacular views of the skyline and be perfect for a variety of occasions, from overnight stays to corporate retreats and small gatherings.
Though separate from Rose & Thorn, guests at “The Rose Petal” will have VIP access to rooftop amenities, including the reservation-only pool.
Timings
The hours of Operation at Rose & Thorn will be as follows:
- Monday to Wednesday: 3 PM to 10 PM
- Thursday to Friday: Noon to midnight
- Saturday to Sunday: 10 AM to midnight
Happy Hours will be on weekdays from 3 PM to 6 PM. Reservations will be required for VIP Poolside Seating, and some seating will be reserved for apartment residents.
While many new rooftops are popping up at RiNo, Rose & Thorn positions itself uniquely with its two-level concept. It stands apart by combining panoramic city views with an underground cocktail experience.
