New to Colorado but no stranger to the restaurant industry, Somying Fox is bringing a new Thai food option to Evergreen. Fox moved to Colorado last year after owning and operating several restaurants in Missouri. Her newest concept, Thai 101, will be located at 32156 Castle Ct., Ste. 105 in Evergreen.
“We love the town,” Fox told What Now Denver. After living in the area for a little while, Fox wanted to get back to work and open a small restaurant. “I looked for a while until I found this location. I would like to have authentic Thai food,” Fox said.
Thai 101 will offer Pad Thai, a variety of appetizers, and desserts such as sweet sticky rice with mango. Boba tea, wine, and beer will also be on the menu.
Fox is now working to get permits, new paint, furniture, and cooking equipment for the new space, which will offer indoor and outdoor seating, as well as to-go and delivery options. Fox hopes to open Thai 101 in early May.
“We have to build a new home here in Colorado, and something that made me feel like this is home is having a Thai restaurant,” Fox said. “Hopefully the Evergreen people will love my food.” Depending on public response and growth, Fox could expand Thai 101 into the vacant, adjacent location in the future.
