New Venture Planned for Pho King Rapidos Founders

The couple will open Saigon Noodle Club at Edgewater Public Market.

Long Nguyen and Shauna Seamen, the dynamic duo behind popular concept Pho King Rapidos, are launching a new business called Saigon Noodle Club. The company announced in an Instagram post last month that it will debut at Edgewater Public Market (5505 W 20th Ave.).

Set to open later this summer, the new venture promises to offer a variety of traditional Vietnamese dishes, including small-batch pho made with 24-hour bone broth, wings, and grilled noodle bowls with fresh herbs, pickled vegetables, and grilled meats.

Saigon Noodle Club will take over a stall that used to host Mac Shack, the Denver Post reports. It will join several other retail and hospitality businesses within the complex: Black Box Bakery, Gyro King, Konjo Ethiopian, Barquentine Brewing, Arepas House, Bibamba Chocolate, Northside Hair Co., YogaSix, Massage Envy, American Axes, and Depew Liquor.

Nguyen and Seamen have quickly gained a reputation as local restaurateurs after launching the Pho King Rapidos food truck in 2020. They went on to have a booth at the Denver Avanti, but stopped operations there earlier this year due to renovations planned at the property.

“This feels like a good opportunity to shake things up and try something new. Saigon Noodle Club is a natural evolution for us and our business,” Nguyen was quoted as saying in a press release.
