The historic Mining Exchange Hotel in Colorado Springs is set to unveil a new restaurant concept called Oro, according to Springs Mag. The resort, located downtown at 8 S Nevada Ave, will welcome patrons to dine at the establishment sometime this spring.
Oro will serve delicious Italian dishes, including handmade pastas, artisan meats, and bold flavors. Starters will include bison carpaccio and scallop crostini, while the eatery will have entrees like rigatoni Bolognese, whole roasted bronzino, and a 20-ounce bistecca Colorado, a press release states.
There will also be a fabulous wine and cocktail program. Bottles of sangiovese from Tuscany, nebbiolo from Piedmont, and falanghina from Campania will be available, along with premium Champagne and New World wines from California and the Pacific Northwest. The cocktail menu will offer classics like negronis and spritzes along with creative drinks.
From the Portland-based culinary group Giant Squid Ink, the concept will be headed by James Beard Award-nominated Chef Aaron Barnett and sommelier and James Beard Award semifinalist Joel Gunderson. They have previously worked together on projects in Oregon like St. Jack and Heavenly Creatures, Willamette Week reports.
The Mining Exchange Hotel, set in a beautifully restored 1902 building that once housed Colorado Springs’ stock exchange for precious metals, is now a modern boutique destination. Its other amenities include BLK MGK coffee shop and an indoor-outdoor bar with small plates called Golden Hour. The hotel is managed by Practice Hospitality.
