South American cuisine concept OREJANO is preparing for its transition from a cloud kitchen/pick up and delivery venture to an established restaurant. The brand’s Instagram announced that the company would be undergoing the changes, setting up retail operations at 800 S Havana St in Aurora.

The fast-casual eatery will welcome guests sometime in April, owner Marcelo Alvariza told What Now Denver. A 700-square-foot space, it used to be StevO’s Pizza and will have counter service and seating for 34 patrons, according to On Havana Street.

While the company prepares to open its brick-and-mortar, it has paused operations out of its cloud kitchen and any catering services for the time being. It previously operated out of the commissary at 2171 S Grape St.

Its menu will consist of South American delicacies, with an emphasis on Uruguayan cuisine. Dishes will include baked empanadas, milanesa, and its signature plate, Sándwich Chivito Uruguayo.

“At OREJANO, we’re bringing the true taste of South America to Denver, combining authenticity with high-quality ingredients and a passion for great food. This is more than just a restaurant—it’s a piece of home, a tribute to my father, and an invitation for everyone to experience the bold flavors of our culture,” Alvariza said.
