Paperboy Brings Texas Brunch to West Highland

Paperboy, an Austin-based brunch concept, is opening a new location in the West Highland neighborhood at 3490 W 32nd Ave. According to Westword, this is the third outpost for the brand but the first outside its Texas hometown.

In this exciting expansion opportunity, the restaurant will bring the brand’s signature daytime dishes to the Mile High City. The Denver space will occupy 3,000 square feet, featuring 75 seats indoors and a 20-seat patio. Design elements will include lush greenery, natural textures, and curated artwork.

Executive chef Pat Jackson has relocated to helm the new kitchen. The menu included signatures like Texas hash, migas, seasonal Pop-Tarts, and Paperboy’s signature pancakes with brown butter. Beverage options will include specialty coffee drinks, cocktails, mocktails, local beer, and fresh-squeezed juices.

The venture comes from Daybreak Hospitality, via entrepreneurs Ryan Harms and Robert Brown. What started as a food truck in 2015 has led to two successful eateries on the east and west sides of Austin, its website explains.
