A local entrepreneur is working hard to start a new venture called Doc Jack’s BBQ, Distillery, and Saloon in Fort Collins, a Biz West article details. Jay Lockwood wants to open the business at 116 Smokey St., but he’s running into issues with requirements and may need to pivot plans.
Lockwood’s background includes being a former co-owner of DorWood Distillery in Buellton, California. During the COVID-19 pandemic, he pivoted to producing hand sanitizer and then relocated to Northern Colorado, New Times SLO reports. He originally wanted to open a venue in Loveland but faced permitting challenges there, so he moved on to the Fort Collins space.
He submitted plans to the city, proposing a distillery and restaurant in the 4,609-square-foot one-story building that sits on a .21-acre lot. It shows there would be outdoor seating on two sides of the property and a kitchen built during a second phase, which was previously a marijuana-grow facility.
However, the requirements in Fort Collins are also proving to be a challenge. The building will need a $50,000 sprinkler system installed due to the chemicals and products that would be inside. He’s trying to determine if leasing or renting would be better, but is set on opening.
