Post Chicken & Beer to Replace Lola Coastal Mexican

The restaurant was first introduced by the Big Red F company in 2014.

Fans of the Lola Coastal Mexican restaurant at 1575 Boulder Street in LoHi may lament their permanent closing yesterday, but fans of the Big Red F company’s Post Chicken & Beer have plenty to look forward to as it takes over.

The first Post Chicken & Beer came into the fold back in 2014 and has since been featured on the almighty Diners, Drive-ins and Dives.

According to recent reporting by Westword, the new Post Chicken & Beer will keep the big bar and outdoor deck, and Big Red F owner Dave Query said he’s “confident that our gluten-free, Colorado-style fried bird, farm-fresh sides, and food-friendly craft brews will find a great home in this ever-evolving neighborhood.”

The website furthers his statement by saying, “We start with humanely raised, all natural chicken, brine it for hours, give it a dip in buttermilk, dredge it in seasoned gluten-free flour, and then pressure fry it to crisp golden perfection.”

The upcoming location for the Post Chicken will be the seventh restaurant for the concept after another one opens up in Fort Collins in a few weeks.

What Now Denver reached out to Query for more information on an opening date, but he was unavailable by phone on Monday. The Westword report indicates that the takeover for Lola’s will be complete in November 2021.
