Press Waffle Co. was a hit on ABC’s television show Shark Tank, and now the restaurant is coming to Colorado. The new Press Waffle Co. location is set to open at the Promenade in Castle Rock in late spring of 2022.
Brothers Bryan and Caleb Lewis first began offering their Liége waffles, which are made from a dough with caramelized clusters of Belgian pearl sugar, from a Dallas food truck in 2016. A storefront opened the following year.
Press Waffle Co. is teaming up with local partners Brian and Jodi Gassmann to open the Castle Rock location. “Castle Rock foodies will love the Insta-worthy waffle creations, and we look forward to showing our friends and neighbors a new way to waffle!” Brian Gassmann, co-owner, said in a press release.
Press Waffle Co. diners can build their own waffles with a variety of toppings or order menu favorites such as The House featuring fresh strawberries, Nutella, and cookie butter.
Chicken and Waffles is a bestseller and features crispy fried chicken tenders, a bacon crumble, and maple syrup. The Cristo is a Liége waffle sandwich with ham, turkey, cheese, and berry jam. The Elvis features a Liége waffle topped with banana slices, peanut butter, honey, and a bacon crumble.
Diners can also enjoy local beer and wine, mimosas, coffees and espressos, and gourmet milkshakes. The Castle Rock restaurant is expected to have extended hours to offer its sweet and savory flavors. “We are excited to serve early morning commuters and night owls the same great waffles we have fallen in love with!” said co-owner Jodi Gassmann.
Press Waffle Co. has four locations in Texas, as well as restaurants in Arkansas, Missouri, and Oklahoma. The Castle Rock location will be the eighth for Press Waffle Co.
