Restaurant Olivia Owners to Open Separate Brick-and-Mortar Concept

The brains behind Restaurant Olivia and the now-defunct Bistro Georgette have plans for a new eatery in the near future

While it’s currently unclear as to what the new concept will be, where it will be located, and when it will debut, a What Now Denver interview with Co-Owner and beverage director Austin Carson regarding these details is forthcoming.

In a brief exchange with Carson, WND was able to infer two things: Restaurant Olivia is undergoing expansion and the incoming brick-and-mortar concept originally reported by the Denver Post is in the works. 

In late June, DP also reported that Restaurant Olivia, an Italian eatery that opened in January 2020 at 290 S. Downing St. in Wash Park, would soon expand into the adjacent 1,000-square-foot space — previously home to an Aveda hair salon. The expansion was slated for completion in the fall. Updates regarding Restaurant Olivia’s progress are forthcoming. 

Carson told BusinessDen that he and his co-owners are also planning to use a third of the space to open a pasta shop during the day tentatively named P.S. Olivia. It will sell “handmade filled and extruded pastas, sauces, pasta tools, the restaurant’s proprietary blend of flour, and bottles of wine.”
