Roll Up Remodeling, Adding Part-Time Dinner Service

Roll Up, local food truck-turned-restaurant, is making some changes. The 301 Main St. business is undergoing renovations to accommodate for more of full-service restaurant vibe, owner Bryce Dillingham tells What Now Denver

The repurposed gas station turned QSR spot has been newly remodeled with extended seating, and construction began today to turn the former garage space into a full kitchen and complete the restaurant. 

Once changes are made, Roll Up will be extending hours until 7 PM on Fridays and Saturdays to add dinner service. A liquor license will be approved for the establishment in about a month, to serve local beers, ciders, wines, and cocktails.

“We want to thank Widefield, Fountain, and Colorado Springs for the overwhelming support that we have received since opening this business. Our landlords Ray and Carmen for trusting us to bring our vision to reality. And our team at Roll Up for their dedication and hard work to help us constantly bring Roll Up to the next level,” Dillingham said.

“We are excited to close the door on our food truck chapter and show everyone what we are fully capable of in our newly renovated building.”
