Rose & Thorn: Rooftop Pool Bar and Basement Lounge

Hospitality and real estate professional Ciaran O’Brien will unveil is next project soon: Rose & Thorn, he tells What Now Denver. The arrival of the dual-concept venue is sure to create a big buzz when it opens at The Penrose apartment complex, 1740 36th Street in RiNo.

Naked Denver reports the business will offer two distinct vibes: a rooftop pool bar with city and mountain views and an underground cocktail lounge. Dubbed “Rose,” the 16th-floor venue will offer poolside specialty cocktails and bites, and “Thorn” will be in the property’s basement, offering a clubby space with drinks and a DJ.

The company’s Instagram has been teasing what to expect at Rose & Thorn, including a “globally inspired menu” featuring upscale, shareable plates, like light salads, lobster and chili lime shrimp, beef carpaccio, and a seafood tower.

O’Brien told the publication he is working on securing the liquor license in May and to open mid-June. He is also in the midst of a large-scale food hall project in Wheat Ridge’s Clear Creek Crossing, which What Now Denver covered recently.
