Denver-born meat market The Local Butcher is adding another location, according to city records. The business is working to open a shop at 1441 S Holly St., with a commercial construction permit currently listed as “in progress” for the site.
The project was first submitted in early September and describes a new butcher shop facility that will process various raw animal products, including beef, pork, poultry, and lamb, along with the sale of cheese, deli meats, sauces, rubs, and other grocery items.
Records show the architectural plan review and health review have been approved, while mechanical and plumbing reviews remain pending. The design team includes Mah Architectural, Rossi Engineering, and Apex Engineers, Inc. The building, which has a listed occupancy of 21, is owned by Kentwood Management, LoopNet states.
Founded by Justin Herd, he first launched The Local Butcher inside the Denver Central Market in 2016 and expanded to a larger, full-service shop in Park Hill in 2019, Westword writes. Last year, he closed the stall at the market. The business’s philosophy centers on pasture-raised, locally sourced meats free of antibiotics and hormones.
