Shopey’s Pizza on Main Street in Louisville recently signed a lease to move into a bigger space. “We need more kitchen area, and we can’t really expand in the current space,” said Shopey’s Pizza owner Greg Shope.
The move won’t come for at least another six months. “We’re hoping there is no stoppage of service for us. It should time out pretty much right in line with our current lease and being able to move everything,” Shope told What Now Denver. He is concerned with the recent fires that the city may run behind in permitting.
Shopey’s Pizza makes all dough in-house, shreds their own cheese, and makes their own chorizo and Italian sausage. “We use uncured pepperoni, same thing with our ham and our bacon, so there are no nitrates or nitrites added to it.”
Twice-baked chicken wings and homemade mac-n-cheese are on the menu. Eleven specialty pizzas are also available with a variety of sauces including the traditional red sauce and garlic-infused oil—the meat trio pizza, chicken bacon ranch, and the chorizo and pineapple to name a few.
“We also say if we can’t make a cheese pizza, then we’re not in the right spot. So our cheese pizza is very popular, too,” Shope said.
Indoor dining, delivery, and pickup options will be available at the new space at 577 E. South Boulder Rd., Louisville, CO 80027. Shope and his business partner Jay Nelson would like to get a liquor license for the new location, but they are still working on that concept.
Shope, who also owns Berthoud Pizza Company, said he and his business partner would like to open a second Shopey’s Pizza location in the future.
