Slim Chickens just opened up their first Colorado Springs location earlier this year and already have another one in the works at 11680 E Woodmen Road.
“It’s been a long and slow process,” said franchisee Byron Wheeler when he spoke to What Now Denver on Thursday. “We’re currently waiting to hear back from the city review.”
The company already has two stores in Denver, and is hoping to add around seven more to Colorado Springs and 12 to Denver within the next three to four years.
“The fun thing about the Falcon location is that we had a food truck out there,” said Wheeler. “That location wasn’t anywhere in our initial radar, but the food truck performed so well that we started taking a look at that area and particular site.”
Wheeler says the food truck’s success heavily influenced their decision to move in. “They supported us enough to land them a physical restaurant.”
The restaurant chain specializes in hand-breaded chicken tenders served “in a friendly atmosphere where people can relax and feel at home,” according to the website.
Wheeler says the new location will be open the second quarter of 2022.
