A taste of the South is coming to East Colfax as Mama Jo’s Biscuits & BBQ prepares to open. The restaurant’s owner told What Now Denver they hope to open in the next few weeks, and are working on hiring and scheduling right now.
Located at 3525 E Colfax Ave, the eatery will bring Carolina-style comfort food to town. Its menu online shows barbecue plates, house-made biscuits, fried chicken sandwiches, yummy sides, desserts, and beer and wine.
It’s the former home of Steve’s Snappin’ Dogs, which closed this fall after a nearly 20-year run, the Denver Post reports. Getting a brick-and-mortar location was the next step for the popular food truck, which husband-and-wife team Ben and Jodi Polson have operated for more than three years.
Jodi has been a pastry chef for many years, working in bakeries and for the Beast & Bottle Group. Ben was a corporate chef for 10 years before he started the Mama Jo’s venture, which they operated mostly at breweries around the metro area.
“From our kitchen to your belly, we can’t wait to serve Carolina comfort food to the Colfax community,” Jodi told the publication.
