Construction on the long-anticipated Tava House project in Woodland Park is moving forward, recent posts from the Pikes Peak Regional Building Department show. The multi-use development, being built at 201 Saddle Club Avenue, will feature a steakhouse, taphouse, culinary school, and event center.
Founder and World Master Chef Victor Matthews told What Now Denver the goal is to open the facility in March. According to Citizen Portal, the project takes up a 6.63-acre section of downtown Woodland Park and will be completed in four phases. Phase one began last year.
The two-story facility will have three distinct areas: a downstairs pour-your-own draft beer section with elevated bar food, an upstairs fine-dining steakhouse called Firebrand, and a banquet/event hall. Firebrand will also act as a satellite campus for Matthews’ Paragon Culinary School. Food and beverage offerings will span from burgers and house-made charcuterie to premium steaks and multi-course fine dining experiences.
Matthews’ culinary résumé is extensive. He’s a “Triple Master” PhD that’s been named Colorado’s Chef of the Year by the American Culinary Federation’s Pikes Peak Chapter and has twice won the Governor’s Symposium on Colorado Cuisine. He’s opened two dozen eateries in his career and his own culinary academy.
“TAVA House is a multi-faceted community hub that not only offers many levels and styles of food and beverage but also connects schools, farms, ranches, local breweries, and distilleries with the community in an inspiring web of support and cooperation. A groundbreaking concept by a team that has been number one in the state a half dozen times since 2000, this crown jewel will adorn the widening world of Woodland Park as an integral part of a bright future,” he said.
