Team Behind Dio Mio Pasta to Open Redeemer Pizza This Spring

Gluten Continues to Develop in Denver.

The team that brought us Dio Mio Pasta, the counter-service restaurant focused on fresh pasta, is set to open the perfect sibling-restaurant: Redeemer Pizza. The team says it better themselves: “Redeemer is a fresh spun concept straight from the pasta apostles behind sister restaurant Dio Mio, chefs Spencer White and Alex Figura, who both share a rather nerdy approach to items of the gluten variety.”

The Dio Mio team opened a pizza pop-up back in January and February, serving about 120 lucky people or so a taste of what’s to come. After the success of that pop-up, the team (which consists of partner LuLu Clair, and partner chefs Alex Figura and Spencer White) secured a space across from the Denver Central Market.

Redeemer Pizza will be coming to RiNo to 2705 Larimer Street, the former house of burger-joint Meadowlark Kitchen. “The layout of the restaurant will remain similar, but there will be new tiles, paint, decor, and, of course, White and Figura’s latest obsession: their Pizza Master oven,” reported 5280 Magazine.

The pizza restaurant will be making some naturally-leavened sourdough pizzas they like to call their New York Style 2.0. They’ll be open for dinner service and take-out lunch, serving whole pies, hoagies and late-night slices to all of us who continue to worship at The Church of Gluten.
