The Bindery will open at the Denver International Airport (8500 Peña Blvd, Denver, CO 80249), according to founder Linda Hampsten Fox. Though there’s currently no specified launch date, Hampsten Fox told What Now Denver The Bindery should open “at the end of the first quarter in 2023.”
Hampsten Fox — who has trained under chefs in Italy, France, and Switzerland — opened The Bindery in Denver’s LoHi neighborhood in 2017 with hopes of “inviting guests to embark with her on a journey back to the roots of food culture while embracing the momentum of the urban lifestyle,” explains the restaurant’s website.
Hampsten Fox’s meticulously prepared menu consists of dishes like green garlic butter oysters and charred octopus agua chile, along with rich & eclectic artisanal soups and salads. With so many fast-fare options at airports across the country, The Bindery seems prepared to bring a luxuriously warm & nurturing experience to an otherwise glacial atmosphere. WND: How will the airport atmosphere alter The Bindery’s approach?
Hampsten Fox: Our menu will offer a variety of creative, elevated, and crated dishes that we are known for. [But] naturally, we will be sensitive to travelers’ time constraints.
WND: What’s your favorite menu item?
Hampsten Fox: Our spicy lamb pappardelle with pistachios and mint.
WND: What can customers expect from this new location?
Hampsten Fox: Travelers can expect a variety of healthy and creative breakfast, lunch, and dinner options plus some amazing Queen City coffee and baked goods.
WND: What are your hopes for The Bindery at the Denver International Airport?
Hampsten Fox: My hope is to continue to provide the quality and excitement that The Bindery menus are known for and for international travelers to experience what makes Denver on the cutting edge of the restaurant scene.
