The Cow Coming to Evergreen This Winter

The owners will expand the Morrison eatery to a new community.

A popular eatery in Morrison known for its laid-back atmosphere and award-winning food is set to open a second location in Evergreen later this year. The Cow will be located at 28215 CO-74, liquor licensing info shows.

Owned by David and Sherri Lind, the restaurant will bring the same community-focused dining experience to the heart of downtown Evergreen. It will be housed in the former Maya’s Cantina space. That business filed for bankruptcy in 2023. 

Sherri tells What Now Denver the new location is slated to open near the year’s end depending on the completion of the build-out by the landlord. “We are being told late October, early November for us to take possession of the building. Taking a stab in the dark, we think December 1 may be possible.”

This Evergreen location will feature a similar menu to the Morrison eatery, with the addition of soft-serve ice cream. The original Cow location, which the Linds opened in 2014, has become a local favorite for breakfast and lunch in a family-friendly setting. 

“We are going to get our feet wet in the Evergreen market and see how we can incorporate that history into another great downtown and become part of an incredible community. So far we have been greeted with nothing but kindness and excitement for the opportunity to grow our business in the area,” she shared.”
