A new restaurant is coming to The Vault Nederland, called The Kitchen at The Vault, according to a permit filing. The restaurant will be helmed by Lauran Knight, a local chef who operates a food truck called Kaleidoscope Kitchen.
The Vault Nederland opened in 2025, a retail space with seven units on 26 Peak to Peak Hwy. Brightwood Music and 8236 Gear moved into spaces in late 2025, and will be joined by Inkhaus Tattoo, 8z Real Estate, and Very Nice Brewing Company. The space, featuring an honest-to-god vault at its center, has served as a sanctuary for some of the businesses that lost their spaces in the October 2025 fire that affected many of the businesses in the Caribou Village Shopping Center, like Brightwood Music and Very Nice Brewing Company.
Knight started Kaleidoscope Kitchen as a food truck in 2021, serving a colorful spread of hearty dishes worthy of its name. While options vary from night to night, Kaleidoscope has a few consistent options like its jalapeno-cheddar elk bratwurst and crab cake sliders. However, a menu hasn’t been finalized for The Kitchen at The Vault.
According to The Vault’s Facebook page, The Kitchen at The Vault should be open by the end of February.
