The ROOST Coffee is Making a Return 

Altitude Hospitality Group will bring the concept back.

Roost Coffee, a past local favorite known for its artisan coffee and homemade pastries, is returning to Colorado Springs in 2025. Fox21 reports the java business will be part of an exciting new culinary center at 9633 Prominent Point, in the Pinery North building. 

This new location promises to bring back the cherished café that once operated within Till Kitchen, offering a fresh and inviting space for coffee lovers in the North Springs area. Till later moved to a downtown location and the coffee concept shuttered.

The return of ROOST is part of a larger vision spearheaded by Mitchell Yellen, CEO of Altitude Hospitality Group. A new food center called The Homestead will feature a variety of local favorites, including Dad’s Donuts, Campfire Pizza, The Mercantile, Garden of the Gods Gourmet, and another Till location. 

Set to open in phases, with the first part of the project is expected to be completed and doors are scheduled to open in March 2025. The Homestead will also include outdoor skating in winter and volleyball and pickleball courts during the summer.
