The Hotel Indigo in North Union Station is getting a new drinks-focused restaurant. The space that formerly used to house Hearth & Dram is being replaced by Three Saints Revival, a beverage-forward restaurant concept by restaurateur Robert Thompson.

The restaurant will be serving Mediterranean-inspired foods to share and tapas along with “celebrating old and new world wines and a robust spirit and craft cocktail program,” according to their official website. The restaurant aims to pair drinking with eating.

The restaurant which has been gearing up to open for a while now, just filed a permit with the city of Denver to remodel the space that was formerly operated by Hearth & Dram. According to the permit filed, the layout will stay as is, but there will be a “new furniture layout and finished to be provided at front of house only.”

We can’t wait to visit this “Bohemian dream” of a space inspired by Robert Thompson’s dream worlds. Restaurateur Robert Thompson is known for founding Denver staple Punch Bowl Social. He also just started operating The Frenchman Hotel in New Orleans.
