Threefold Bakery Bringing Goodies to Breckenridge

Breckenridge is preparing for a sweet new addition with the opening of Threefold Bakery at 100 N. Main St. According to Dining Out Denver, the concept comes from a trio of chefs and friends who all have extensive experience in the industry.

The bakery is the collaboration of James Beard Award-winning Chef Matt Vawter and California-based chefs Sean and Melissa McGaughey. Vawter also owns two other eateries in town, and the McGaugheys are known for their businesses, Quail & Condor bakery and the Michelin-recognized Troubadour Bread & Bistro.

Threefold Bakery will serve crafted sourdough breads, a variety of pastries, sandwiches, and specialty coffee. The bakery marks the return of the chef-owners to Breckenridge, reconnecting with the town where they all first honed their culinary skills over two decades ago.

Vawter was raised in Summit County and began his culinary journey through Colorado Mountain College’s Culinary Apprenticeship Program in Keystone. According to SkiMag, he worked at Fruition and Mercantile Dining & Provision before opening restaurants Rootstalk in 2020 and Radicato in 2022. In June 2024, Vawter won the James Beard Award for Best Chef: Mountain.
