The owners of Péche are opening a new restaurant in downtown Grand Junction, first reported by The Daily Sentinel. The upcoming restaurant, Tiki Bird, is preparing to roost on 119 N. Seventh St., in a space that formerly held Junct’n Square Pizza.
Co-owners Matt and Ashely Chasseur opened Péche in August 2019, an upscale restaurant that highlights the surrounding environment in Palisades, with seasonal items arranged in a thoughtful menu. The Chasseurs are keeping the exact concept of Tiki Bird under wraps, but assured The Daily Sentinel that the quality of the service and food won’t change across restaurants, aiming to bring the same level of quality to Tiki Bird that made Péche a go-to dining destination in the region.
Yes, that is what every restaurant owners says about their second location. But, not every restaurant owner writes an entire blog post documenting how they handcrafted their own tables by learning how to epoxy. “These tables will become first dates, new friendships, celebrations, heartbreaks, and everything in between,” the owners write.
The pair have documented much of the opening process on their Instagram page, peeling back the curtain as they tear out walls and reveal the bones of the restaurant. The pair plans to open Tiki Bird by mid-April.
