Wolf Peach Owner Opening Another Concept

Cask & Trotter is preparing for debut in Parker.

Parker’s dining scene is set for another boost, with the news that Table 31 Hospitality owner Jeffrey Coyle will open his next concept in a few months. Called Cask & Trotter, the eatery is under construction in The Juniper building, 19865 Mainstreet, Unit 150, according to community posts.

A recent progress update shows the 5,000-square-foot open-concept restaurant is in the midst of buildout. Public permit records show construction is ongoing. In September, the Town of Parker issued a Commercial Tenant Finish permit valued at $216,695 and an electrical permit valued at $147,500.

Coyle confirmed the concept’s name and that it will he premiering in late January or early February. He also teased that Cask & Trotter will be “rustic and approachable” with a “highly-seasonal, regional” menu that will rotate every six to eight weeks.

The space is a neighboring tenant to the upcoming second location of the award-winning Poulette Bakeshop, in The Juniper mixed-use development. It features 264 residential units and more than 13,000 square feet of retail space.

Coyle has an extensive hospitality background. His career includes leadership roles across hotel, restaurant, and consulting sectors, culminating in the launch of Table 31 Hospitality in 2023 and the launch of his other venture in town, Wolf Peach Public House.
