Sushi REV is revving up for a big debut in Houston. According to a recently filed Texas Department of Licensing and Regulation permit, the new Sushi REV is expected to open in Midtown at 3201 Louisiana Street, Suite 108.
The address was recently home to Pok Pok Po, an Indian fast-casual chicken restaurant that just closed in late August.
The permit for the new Sushi REV further details that the construction project is expected to start in mid-December of this year and is slated to wrap up by mid-June 2027. If all goes well with permitting and the estimated $300,000 construction project, the new Sushi REV should open by next summer.
The brand will open its third location, with the first two in California, under the Octopus Restaurant Group.
“The Octopus Restaurant Group was founded on the basis of the most important aspect of hospitality, a sincere passion to serve,” the hospitality group’s LinkedIn page reads
“The company seeks to reflect the core beliefs of high standards through the use of the finest ingredients and impeccable service. In constant pursuit of excellence, the Octopus Company strives to achieve and maintain a distinction in Japanese cuisine through modernization of dishes with traditional principles.”
The company was founded and is led by Jae Chang. The Octopus Restaurant Group is headquartered in LA and offers concepts that blend modernized Japanese cuisine with traditional culinary principles and contemporary styles, fresh seafood, specialty sushi rolls, and signature cocktails. The group and its founder have also helped expand popular dining concepts across the Western U.S., including Japanese fusion and Korean barbecue brands like Gen Korean BBQ Restaurant.
What Now Houston briefly spoke with the hospitality group’s Operations Support Coordinator, Jeff Lu, who confirmed the debut of Houston Sushi REV. Unfortunately, Lu was unable to share further details by the time of this publication.
“Looking for fresh, fast, and fun sushi? Welcome to Sushi REV, your new favorite spot for casual revolving sushi,” the Sushi REV website reads.
“Our modern conveyor belt brings a constant flow of handcrafted sushi, rolls, and Japanese sides straight to your table. Just grab what you love and enjoy!”

Chang founded Sushi REV in California in 2025. For years, Orange County diners seeking conveyor-belt (kaitenzushi) dining had only two main options: the massive Japanese chain Kura Sushi and the local mainstay Kaisen Kaiten. In the summer of 2025, that selection doubled when the upscale Waka Sakura opened in July, followed a month later by Sushi Rev.
Built around the tagline “All about the REVolution,” the restaurant uses modern conveyor-belt technology. Patrons can grab traditional plates directly from the belt or order specialty items via tablet screens. Sushi Rev carved out a niche by offering competitive pricing comparable to major chains ($3.75 for most baseline plates) while serving larger, fatter fish cuts and operating with a more premium, modern aesthetic.
“Everything is made fresh with quality ingredients, and our laid-back, family-friendly atmosphere is perfect for quick lunches, casual dinners, and group hangouts,” the brand’s website reads.
“Whether you’re a sushi pro or just curious, there’s something for everyone at Sushi Rev. Sushi’s always rolling at Sushi REV!”
Since its launch, the restaurant has evolved its menu to keep up with consumer demand, expanding its basic raw selections into more specialized items like flavored carpaccios, truffle seaweed salmon, and hot Izakaya side dishes like chicken yakitori.
Check it all out for yourself when Sushi REV debuts in Houston in Midtown at 3201 Louisiana Street, Suite 108 by next summer.
