Ice cream lovers across Las Vegas are in for a sweet surprise this New Year as Salt & Straw prepares to debut today. The beloved ice cream brand is bringing its signature flavors to two iconic Strip destinations: Paris Las Vegas and Flamingo Las Vegas.
Salt & Straw Opens its Doors at Iconic Las Vegas Strip Locations

The two outlets of Salt & Straw that are ready to welcome patrons are based at Paris Las Vegas and Flamingo Las Vegas.
In celebration of the debut, both locations will present ‘The Icons Series,’ a special menu. Created by co-founder and head ice cream maker Tyler Malek, the latest menu features a variety of Salt & Straw’s tempting flavor options.
Cousins Kim and Tyler Malek are the founders of the beloved ice cream brand. Over the years, the duo has built a devoted following with a mix of classic and inventive flavors. These include classic picks, such as Sea Salt with Caramel Ribbons. Patrons also receive creative options like Strawberry Honey Balsamic with Black Pepper.
Beyond its core lineup, Salt & Straw is known for its monthly rotating flavors. The brand’s monthly rotations often spotlight local farmers and artisans while celebrating cultural traditions.
Kim Malek, co-founder and CEO at Salt & Straw, said, “Bringing Salt & Straw to the Las Vegas Strip is a dream realized. We started this company to build places where people could come together, connect, and celebrate life over a scoop of unforgettable ice cream.”
“To now open beneath the Eiffel Tower replica at Paris Las Vegas and the neon lights at Flamingo Las Vegas – it’s hard to imagine two better locations to debut on The Strip. This is where people from around the world gather for iconic, once-in-a-lifetime moments, and we’re honored to be part of that,” Kim added.
Sean McBurney, Chief Commercial Officer and Regional President of Caesars Entertainment, said, “Salt & Straw brings a creative, fresh take on ice cream that fits perfectly with our culinary collection at Caesars Entertainment. They’re a destination in their own right, and we’re excited for locals and visitors to enjoy their inventive flavors at our two new locations on The Strip.”
New Menu Highlight: The Icons Series

Head ice cream maker, Tyler Malek, has prepared 13 classic, always-available flavors for patrons. Sea Salt with Caramel Ribbons, Honey Lavender, Arbequina Olive Oil, and Chocolate Gooey Brownie are some of the cherished picks.
As part of the debut celebration of Salt & Straw on the Las Vegas Strip, Tyler has now come up with ‘The Icons Series.’ The offerings include Tyler’s favorite iconic flavors that go perfectly with different types of celebrations.
The Icons Series begins with ‘Pots of Gold & Rainbows,’ which features rainbow marshmallows hand-sorted and then tossed into a cereal-steeped ice cream. Another delicious offering in the series is ‘Birthday Cakes & Blackberries,’ which includes a double vanilla ice cream mixed with birthday cake pieces and blackberry jam.
The ‘Almond Brittle with Salted Ganache’ treat is filled with pieces of almond brittle along with creamy chocolate ganache blended in vanilla ice cream.
Salt & Straw’s latest ‘Chocolate Chili Crisp Peanut Butter Cups’ offers milk chocolate ice cream with bite-sized, house made chili crisp peanut butter cups and is blended with peanut butter marshmallow fluff.
The Icons Series also offers ‘Death by Chocolate Chocolate Cake.’ This new sweet bite features chocolate barley oat milk mixed with chocolate caramel fudge and hunks of chocolate cake. A chocolate ganache offers the finishing touch to the delicious offering.
