Bobby Flay has opened his Italian restaurant Amalfi by Bobby Flay in Caesars Palace, according to a press release Thursday.
“Inspired by Flay’s extensive travels to Italy and the Amalfi Coast, Amalfi transports guests to the Mediterranean with its vibrant blend of coastal ease and fresh, bright flavors,” the announcement states.
“After immersing myself in Italian culture and spending time exploring, cooking and eating with the country’s greatest chefs, I can honestly say Italy has stolen my heart,” Flay said in the release. “My time in that region inspired me to bring fresh fish, perfectly made pastas, herbaceous flavors, and so much more to Caesars Palace. I put my heart and soul into every restaurant I open, and I’m always looking for new ways to evolve. Amalfi is special because I get to showcase my passion through my signature bold flavors, but in an all-new way that will evoke the tastes, smells and feels of Italy.”
Dishes range from light antipasti to a large menu of pasta. A focal point of Amalfi is the fresh fish and seafood display, inspired by coastal Italian markets and staffed by a fishmonger, who is available to answer any guests’ questions — from where the fish is from, when it arrived in Las Vegas, and more. Guests may order a whole fish, prepared grilled over charcoal or roasted al forno, served with lemon, capers, and salsa verde. To finish on a sweet note, dessert staples will include pistachio olive oil cake and dark chocolate tiramisu.
Designed by Olivia Jane Design & Interiors, Amalfi features a natural palette and touches of greenery throughout, blended with elements like organic fabrics, stone, and wood materials.
Amalfi offers four spaces: the bar and lounge, the grille/main dining room, the market room, and a private dining room. Amalfi by Bobby Flay at Caesars Palace is open 5 to 10 p.m. Sunday through Thursday and 5 to 10:30 p.m. Fridays and Saturdays.
