Located near Skye Canyon Park, Aspire Coffee House is a health- and wellness-focused coffee shop from local entrepreneurs Lyndsi Lillis and Mandie Gilbert. The coffee house is planning on an expansion of its service, according to paperwork recently filed with the Las Vegas Planning Commission, which requested a license to serve beer, wine, and liquor on the premises.
Lyndsi Lillis confirmed the news in a phone call with What Now Las Vegas on Monday. Aspire’s business hours currently run from 7 am to 2 pm, but with its new liquor license, these hours will be expanded to include a happy hour from 4 pm to 8 pm, and will also include a new brunch program.
“We like to keep everything local,” Lyllis said, specifying that the café’s draft beers would focus primarily on local brews. Given that the restaurant will be operating during later hours, she added, the menu will also expand to include charcuterie choices and several flatbreads.
Aspire currently offers a variety of coffee and tea drinks, including cold brews, “Superfood Lattes” like the Green Eye (matcha with a shot of organic espresso), and an assortment of chai lattes.
Food offerings include toast in varieties like Avocado Toast and Caprese Toast, gluten free pastries, and desserts like affogato. Smoothie and Smoothie Bowls are also available.
